Do you know what I haven’t done in ages – a food diary post! I know I’m not the only person who loves reading WIAWs. I owe some of my most creative meals to ideas I’ve gotten from blogs, instagrams and videos of people showing the world what they ate that day. I didn’t have the most interesting of days food-wise today, but this is a glance into a typical weekday food-wise for me.
First things first, I had a cup of rooibos tea and two pints of water when I got up. I like to drink tea as I’m getting ready for work in the morning to warm me up. Usually I’d have green tea, but lately my love of rooibos has taken over. Green tea, I’ll only ever have in the morning, but rooibos I am obsessed with drinking all day. Caffeine free goodness!
I was running a little late this morning, but I still had time to make some delicious porridge with almond milk, bananas, cinnamon, chia seeds and hazelnuts! Then I jumped into my car with another rooibos tea, and off I headed to work.
It was a busy day today. I felt as if I was drowning in a sea of emails. Every time I made a small dent in my inbox, twice as many emails then came through!! I grabbed lunch at about 2pm and I was so ravenous that I forgot to snap a picture before I dug in. So above is my half eaten lunch – spiralized courgette & cucumber, with mango and avocado. I squeezed fresh lemon and lime over it for a zingy dressing. Delicious! I also had a mandarin and a banana.
About 4pm, my colleague went on a coffee run and brought me back a steamy americano – no milk, no sugar, just the way I like it. It was much needed, and it was just the fuel I needed to finally empty my inbox!!
After work, I collected my little brother from the school bus. I had to wait around for about 20 minutes, and as you can imagine, by the time 7.30pm came around, I was starving. I bought a box of mandarins and a bag of crisps in Aldi – you guess which one I decided to go for! I have to say, this is not a typical occurrence for me so I don’t feel so bad about it. I had a few mouthfuls of sea salt & black pepper chips, and the rest can be shared with my family later!
I finally arrived home with my brother in tow and my mum had made me one of my favourite dishes for dinner – ratatouille! I love my veggies, especially aubergine & courgettes, so I ate a great big bowl of it 🙂
Right now, I am relaxing in front of the stove in my pjs and contemplating making some ‘nana ice cream for dessert. There’s never a reason not to have ‘nana ice cream. And maybe another cup of rooibos tea!!
