Purple Porridge

I know it’s summer but this morning I was craving oatmeal. The only problem was that I had no bananas, and to me, porridge is not porridge without a banana or two. I absolutely adore the sweet and gooey texture it gives. So without bananas, my morning was off to a dismal start. I had two options.

1) Run out to the shop and buy bananas. This was never going to happen as I wasn’t dressed yet and I was painfully aware that the council were going to turn off our electricity for the day in 20 minutes, just enough time to either go to the shop or make breakfast, not both!

2) Use something else to sweeten my porridge. Ding ding ding ding ding, we have a winner!

What did I have though? I scoured my cupboard, fridge and the fruit bowl. I found dates, apples, blueberries and blackberries and huge opportunity for experimentation.

I threw everything into the pot along with the soaking oats and started to stir.

After about 4 minutes, I realised that my oats were slowly turning pink, no, purple! The blackberries had popped with the heat and a beautiful purple explosion took over. At this point my housemate came into the kitchen on her way to work and remarked at the delicious smell and then at how ‘funny’ it was that I was extremely excited at how I had, unbeknownst to myself, turned my breakfast purple. What a happy accident!!

To make my purple porridge you will need:
1 cup oats
1 cup unsweetened almond milk
1 cup water
1/2 an apple
4 pitted dates
Handful of blueberries (I used frozen)
Handful of blackberries
Cinnamon (to taste)

Instructions (because some people don’t know how this porridge thing works!): Throw everything into a pot and cook on a medium heat, stirring occasionally. Once cooked to your desired consistency, take off the heat and serve in your favourite bowl 🙂 I garnished my purple porridge with almonds, chia seeds and more blackberries and then mixed it all around violently once I had satisfied my photograph requirements. The joys of blogging eh?! 🙂

I think this is such a nice twist to every day oatmeal. It not only looks pretty, but it tastes delicious and is amazingly good for you.   1. Such a good recipe! I’ll remember to make this next time I run out of naners. I think the same way – bananas are a necessity to me when it comes to oatmeal/porridge 🙂

    • Thanks Haley. I know, bananas are a requirement as far as I’m concerned! I’m actually looking forward to running out of bananas again so I can try other combinations guilt free 🙂

    • Thanks Becky. I assure you it tasted just as pretty as it looked 🙂 I absolutely adore berries, although next time I think I’m going to experiment with the cooking liquid instead – how does oats cooked in chai tea sound?! X
