I have never been so happy to see the end of a day before. All I want to do is sleep, so let’s jump straight into my fifth day of eating vegan.
Breakfast: No your eyes do not deceive you, there is actually no green smoothie in this picture! I wasn’t feeling particularly hungry this morning, and I had half a watermelon in the fridge that needed to be eaten asap, so that’s what I had. Along with my green tea and pint of water of course.
Lunch: Or should I say brunch! My tummy was rumbling about midday and I was craving something sweet and carby – this is the reason I have my green smoothie every morning!! I thought I would experiment by making vegan pancakes and spruce them up a little bit with some spirulina! I made my own oat flour and made the batter with all the ingredients listed below – I used about a cup of green tea for the consistency that I prefer! Once I poured the batter on the pan, I added frozen blueberries and some mixed seeds. I didn’t like the way the first pancake looked when I flipped it (it’s hidden underneath the other three!), so I finished the rest of the pancakes off under the grill. It was a very productive Friday afternoon overall AND I have discovered my new favourite healthy (albeit a little green looking) brunch item!
1 cup oat flour
1 tbsp spirulina
1 tbsp chia seeds
Chilled green tea
Dinner: I can’t get enough of spiralized courgette at the moment. I didn’t have it yesterday so it is perfectly acceptable to have it today, right? Coriander and ginger courgetti with the remainder of my batch of quinoa and green lentils. Oh and I must not forget the half a roasted butternut squash on the side! Delicious!
Snack: No snacks at all today except for an apple at about midnight when I realised I wasn’t leaving work any time soon and needed a quick boost of energy 🙂
