Vegan Week: Day Four

Day FOUR! Over half way there. It doesn’t even feel like a challenge anymore. It just feels like a way of life…. I can already hear my carnivore friends groaning and rolling their eyes at me right now!! Anyway.. let’s get on with it shall we?

Breakfast: aka smoothie time. I needed some spirulina this morning for a bit of an energy boost as only got 6 hours sleep and ideally I need 7-8 hours every night! I also switched it up and used chilled green tea instead of just water for my liquid this morning – it really doesn’t taste any different, but gave my breakfast that extra boost of antioxidants.

What’s in my smoothie today?
1 banana
Handful of spinach
Handful of frozen blueberries
1 tbsp milled hemp
1 tbsp spirulina
1 tbsp chia seeds
Almond milk
Matcha green tea

Lunch: Possibly my favourite lunch so far – Stuffed baked mushrooms. What is it stuffed with I hear you ask? Well, my trusty batch of quinoa has yet again had its use – I had forgotten how versatile quinoa is. I also added red pepper and broccoli too to add a bit of crunch. I eat by texture first, than by flavour – does anyone else do this? – and this was pure and utter joy in my mouth and belly!!!

Dinner: This is probably not the most appetising of pictures but I was half way through before I remembered to snap a photo! I was working another evening shift so this was a lunchbox meal. Pasta Bolognese made with rice pasta, quorn and fresh whole tomatoes. I was also a little heavy handed on the cayenne pepper so it was deliciously spicy.

Snacks: Snacks today were two mandarins, a handful of dates and almonds, and a cup of  night time tea to help me relax after work and catch up on those Zzzzzzzzz’s!

  1. Your diet looks amazingly healthy! You must feel fantastic 🙂 I often have smoothies for breakfast, they’re a great energy boost for the day ahead. x
