Vegan Week: Day Three (WIAW)

It’s the first time I’ve participated in What I Ate Wednesday 🙂 This is one of my favourite days of the week for reading blogs as I am food obsessed and love knowing what other people eat! Even more so this week as I’m looking for some very delicious vegan recipes to try out. I had such a lazy Wednesday with no work – coffee with friends, reading, listening to various ballets by Minkus, Dutch study and just general relaxation. We all need these kind of days.

Breakfast: Another morning, another green smoothie. I was still out of green tea so I brewed myself some three mint tea as I went about making my smoothie. I forgot how much I loved mint flavoured things, so I threw some fresh mint leaves into the blender and left out the spirulina today as it tends to sometimes overpower the flavour of the other ingredients. A helpful tip that I’ve learned is to chew your smoothie. That’s right, don’t drink it, chew it. It’ll digest a lot better once your salivary glands start secreting the necessary enzymes to prepare your stomach and intestines for the whole digestive process. I add whole chia seeds to remind me to chew. It may seem a bit weird at first, but your body will thank you, believe me!

What’s in my smoothie today?
1 banana
1/2 avocado
Handful of spinach
Handful of frozen blueberries
1 tbsp milled hemp
1 tbsp chia seeds
Fresh Mint
Almond milk

Snack: I met friends for a coffee at noon. As they tucked into their decadent chocolate brownies and huge slices of carrot cake, I took out my new secret weapon – raw chocolate mulberries! These ‘tiny titans of flavour and nutrition’ (that’s what it says on the bag!!) are my new go-to treat for when I’m craving something sweet – although all my cravings have completely disappeared since eating a solely vegan diet, and it’s only day three! A bag of Raw Chocolate Mulberries cost €6.50 at Here’s Health and it’ll be interesting to see how long they actually last.

Lunch: I didn’t know what I wanted for lunch so I thought, why not have a bit of everything!! My mum’s beetroot hummus from Monday made an appearance again, this time with red pepper as well as cucumber sticks. This stuff is ridiculously garlicky – with every bite all I kept thinking was thank goodness I didn’t have to work today – I would scare everyone in the hotel away!!! I had a small cup of green smoothie that was left over since this morning and I ate half a watermelon with a spoon – my absolute fav way to eat watermelon. I finally replenished my green tea stock so, I enjoyed a cup of Supreme Matcha Green.  It’s my first time buying Matcha rather than Sencha, and I haven’t done a lot of research on the differences yet but I thought I’d give it a whirl since I love all of Pukka’s other teas! Lunch literally lasted 3 hours as I snacked, read and listened to pieces from Don Quixote! ❤

Dinner: I couldn’t resist making courgetti again tonight!! Now that I have my spiralizer, I have a feeling that this will be my go to meal on lazy days like today!! I roasted vine tomatoes and aubergine in a little bit of extra virgin olive oil & fresh basil, and added them into the courgetti once they were cooked. A generous helping of black pepper later and my bowl of veggie goodness was devoured within minutes. Courgetti, or zucchini noodles, are such a great alternative for those of you who can’t digest wheat pasta without feeling severe abdominal pain like me!!

Snack: I know I shouldn’t have coffee in the evening but I am a firm believer of never depriving myself of something that I want. And I wanted coffee!!!! I made myself a blended iced coffee with banana as a sweetener. I may have accidentally made enough for two and drank it all….. but it was so worth it. Or at least it will be until I can’t sleep tonight!

Day three down! Everyone I have spoken to about my vegan week has given me a concerned look and told me how difficult it would be but I am finding it to be the complete opposite. I’m having a great time. The more I am educating myself on the benefits of a plant-based diet and the harmfulness of dairy, I can honestly see myself living this lifestyle longterm. I’m not making any promises though. Let’s just see if I make it through the week first!!!
