Easy Eats: Healthy Avocado Pasta

You know those days where all you want is comfort food. Well today is one of those days! After a 5.30am start and an incredibly intense day, by the time I got home I was absolutely ravenous. The only problem was I hadn’t done a food shop and I was far too lazy to go and do one at 8pm! So I decided to raid the cupboards & refrigerator, and experiment with whatever little food I had. This was probably my best idea of the day! I made the most satisfying dinner I have eaten in a long time – wholemeal pasta with a deliciously creamy avocado sauce. It was so tasty that I had to write it down so I thought, why not blog about it so that everyone can benefit. Blogspiration comes at the most unexpected times!

How do I make this insanely gratifying pasta sauce you ask? Simples! Just throw the above ingredients into a blender and the result is a creamy concoction of scrumptiousness. I then lightly stir-fried one chopped portobello mushroom and about 3 handfuls of spinach in coconut oil before pouring my blended sauce into the pot and allowed to cook on a low heat for 3-4 minutes. Finally, I added in my cooked wholemeal pasta, mixed it all together and voila – a creamy pasta sauce that you can eat as much as you like and not feel guilty! Clean eats are the best eats!

Tasty Tips
*If you’re not a vegetarian like me, feel free to add chicken or any meat of your choice.
*If you don’t have coconut oil, olive oil will work just as well
*The above makes enough sauce for 2 servings, so I popped the rest of mine in the refrigerator for tomorrow 🙂
*To make the dish even healthier, you can substitute the pasta for courgetti noodles (a.k.a zucchini noodles for all you stateside folk!).
*The best thing about this dish is that you can also make it raw, and by raw I mean not using any heat on the sauce. Just sprinkle some lemon juice on the raw courgetti noodles to soften them, and pour your creamy avocado sauce of deliciousness straight from the blender.

I am obsessed with avocado & coconut oil lately, not only for their amazing health benefits but also because they are just so darn delicious. Hurray for healthy fats!!   1. Don’t you love when you throw ingredients together & something delicious is made? 🙂 BTW – I just read the above comment about avocado oil. I’m not sure if your familiar with vitacost, but they have it.

    • You definitely need to try it. I used to not like avocado because of the texture (it’s very soft & creamy) but now I adore it and use it as a substitute for cream in things like soup!
